String Bean and Potato Salad

This wonderful salad always says spring is here to me. It is a great anytime dish that goes especiallly well with grilled meats. Try it at your next BBQ.

Ingredients:

  • 2 Large White or red potato
  • 1 pound string beans
  • ½ cup extra virgin olive oil
  • ½ cup white balsamic vinegar
  • Salt and pepper
  • ½ large red onion, thinly sliced
  • A few springs of fresh mint chopped

Procedure:

Put the sliced onions into a small bowl and top with ¼ of the vinegar, this will remove some of the sharpness of the raw onion. Boil the potatoes salted water until tender. Remove and allow to cool. Add the beans and boil 5 to 7 minutes. I go shorter as I prefer my beans more al dente. Strain beans in a colander and then rinse cold running water , then drain well. When the potatoes are cool cut them into large chuncks Drain the onions. In a large bowl, whisk together the oil, remaining vinegar, salt, and pepper. Add the mint, onion, potatoes, and beans, and toss gently. Enjoy!!
