Grilled Sausage Onions and Potatoes

This is one of my favorite summer dishes.  The best part is the whole dish can be done on the grill. The flavor of the sausage the carmelized onions and the crispy potatoes, three simple ingredients done simply, what could be better

Ingredients

4lbs Sausage hot or sweet (about 20 links)
2 large Sweet Onions sliced thin
5 Yukon Gold Potatoes – sliced ¼ inch thick
Extra Virgin Olive Oil
Salt and Pepper
2 tsp Rosemary finely chopped
2 tsp crushed red pepper flakes

Process

Get your grill nice and hot.  Place a flat top pan on the grill and add 2 tbsp oil.  When its hot add the onions.  Reduce heat on grill to med/high and add salt, pepper, and red pepper flakes.

Allow onions to cook for 10 minutes.  When the onions are soft and carmelized remove from the grill and place in a bowl.  I like to put them on a upper rack on the grill to keep warm.  In the meantime take your sliced potaotes and put on a baking sheet.

 

 

 

 

Drizzle with olive oil and sprinkle with salt, pepper and chopped rosemary.  Place potatos directly on the grill.  Allow to cook for about 3 to 5 minutes per side.  Check them frequently you want them to be a nice caramel color and crispy but not burned.

At the same time add your sausage.  When the sausage is cooked  you are ready to serve.  You can serve this on a platter or you can make sandwiches with some fresh Italian bread.  I like mine with a thick slice or Jersey Tomato.  Enjoy
