Simple salad using great fresh ingredients. Sweet tomato, crunchy cucumber, spicy onion and the saltiness of the feta make this salad perfect.
2 large ripe tomatoes cut into large chunks
1 large cucumber seeded and cut into chunks
1 medium red onion thinly sliced
8-10 oz Bulgarian Feta crumbled by hand
¼ cup pitted Greek olive or capers
Salt and pepper
½ cup olive oil
¼ cup red wine vinegar
1 tsp dried oregano
In a large salad bowl combine tomato, cucumber, red onion, feta, capers and olives. In another small bowl whisk together the olive oil, vinegar, oregano salt and pepper. Pour over the salad mixture and lightly toss. Serve with some crusty bread.
