Marinated Cantaloupe with Prosciutto

This is a great recipe that is elegant and simple to make. It is a great twist on the traditional prosciutto and melon. Serve this at your next BBQ or dinner party and impress your guests.


1 ripe cantaloupe
1 large carrot grated
2 scallion chopped
1 lemon juiced
Salt and Pepper
6 tbsp Sherry Vinegar
½ cup Extra Virgin Olive Oil
12 slices Prosciutto or Serrano Ham thinly sliced cut in half


Using a melon ball-er scoop out the cantaloupe and put into a bowl. In a separate bowl add the carrot, scallion, lemon juice, sherry vinegar, olive oil, salt and pepper. Mix well and pour over the melon balls. Put into the refrigerator and allow to marinate for 3 to 4 hours. To present put two melon balls onto a skewer and wrap with prosciutto. Arrange on a plate and spoon a portion of the remaining marinade over the skewers.
