Peter’s Famous Tomato Salad

This is a wonderful tomato salad that I have been eating since I was a child.  The sweet tomato, salty cheese, the bite of hot pepper and the presentation looks great too.  Mom did most of the cooking but when Dad made something it was always memorable. Try this great anytime tomato salad

Ingredients

2 Beefsteak tomato – Sliced thick
1 large clove garlic – sliced paper thin
1 long hot pepper sliced
½ red onion sliced thin
¼ cup red vinegar
1/3 cup extra virgin olive oil
2 tbsp grated romano cheese
6 large basil leaves – chiffinad
Fresh ground black pepper
1 loaf fresh Italian bread

Procedure

Put the sliced onion into a small bowl with the red vinegar.  Doing this helps take some of the sharpness out of the flavor of the red onion.  On a large plate arrange the tomato slices and season with black pepper.  Next add the garlic slices and sprinkle on the grated cheese.  I do not add any salt because the cheese is salty.  Then add the red onion, just remove it from the vinegar and arrange over the tomato, discard the rest of the vinegar. Then top with hot pepper and basil leaves.  Lastly drizzle generously with extra virgin olive oil.  Serve with a loaf of Italian bread.
