Roasted Kalamata Olives

Cooked olives? The flavor is amazing, it’s a must try at your next party. This is the perfect appitizer for a cocktail party. The best part is dipping bread in the sauce that develops in the bottom of the dish.

1 lb Kalamata Olives
3 tbsp Olive Oil
Zest of half an orange
Half an orange sliced
¼ cup orange juice
¼ Red Onion sliced thin
8 cloves garlic
2 or 3 sprigs of thyme
2 or 3 sprigs of rosemary

Preheat oven to 400 degrees. In an oven safe pan heat olive oil and gently cook whole garlic cloves until just beginning to brown. Add thyme, rosemary sprigs and orange zest. Cook one minute. Lastly add olives, red onion, orange slices and orange juice. Put pan into the oven and bake for 8 to 10 minutes. Serve warm with a loaf of Italian bread, glass of wine and a few good friends. Enjoy
