The Best Rice Pudding

Nothing says comfort food, like rice pudding does. Rich, creamy, with a touch of cinnamon on top, I am going to go and make some now….


1 cup Carolina Rice
1-cup sugar
2 egg yolks
½ cup heavy cream
1 tsp vanilla
8 cups whole milk


In a pot mix rice, sugar, and milk together. Put heat to med-high and bring to a boil. Lower to a simmer and cook for 45 minutes stirring often. Next in a separate bowl, mix an egg yolk, vanilla and heavy cream. Temper this mixture with some of the rice pudding. Then add to large pot mix well and remove from heat. Put into a casserole dish and refrigerate. To serve, scoop some into a shallow bowl and top with cinnamon. Enjoy!!
