An amazing accompaniment to bbq pork or chicken. These also make great burger toppers. You can also top these with ice cream for a light delicious dessert.
- 2 tsp kosher salt
- ½ tsp chili powder
- ¼ tsp chipotle powder
- ¼ tsp cinnamon
- 3 tsp dark brown sugar
- ½ cup rum
- 2 tbsp melted butter
- 6 slices pineapple, about ¾ inch thick
- Canola or vegetable oil spray to coat grill
In a small bowl mix the rum, salt, spices, and brown sugar. Brush the mixture over both sides of the pineapple slices. Place pineapple slices onto hot grill and cook for 1-2 minutes on each side until caramelized. Reduce heat to low and cook for 2 to 3 minutes more, or until the pineapple is tender.
